One of the best taco casserole recipes is the one for Beef and Bean Taco Casserole from Betty Crocker. Another good taco casserole recipe is the one for Taco Salad Casserole from Taste of Home.
Although there are several different recipes for taco casserole to choose from, they have many of the same ingredients and similar directions. For instance, both the Betty Crocker and Taste of Home recipes call for 1 pound of ground beef. However, the Taste of Home recipe says to brown the ground beef in a pan with green pepper and onion, whereas Betty Crocker says to brown the ground beef by itself and then add taco seasoning, refried beans and salsa.
In general, prepare a taco casserole by lining the bottom of a baking dish with broken or crushed tortilla chips and topping it with beef, refried beans, onions, green peppers and cheese. The Betty Crocker recipe says to add fresh chopped tomatoes to the mixture before baking, but the Taste of Home recipe says to wait until after it is cooked to add any tomatoes.
Bake the casserole uncovered in an oven ranging from 350-375 degrees Fahrenheit for about a half hour, until the mixture is bubbly and the cheese is melted. Top with lettuce, black olives (if desired), tomatoes and more crushed tortilla chips.
