Some Sweetie Pie's recipes include sour cream and chive mashed potatoes and Sweetie Pie's mac 'n cheese. Each recipe makes about four servings and takes about 30 to 45 minutes of preparation time.
To make Sweetie Pie's mac 'n cheese, cook 2 cups of elbow macaroni to al dente. Preheat an oven to 375 F, and grease a 3-quart baking dish. In a bowl, thoroughly whisk together a 12-ounce can of evaporated milk, 2 to 3 tablespoons of sugar, 2 eggs and 1/3 cup of sour cream. Add the cooked elbow macaroni, and mix thoroughly.
To the macaroni mixture, add 2 tablespoons of butter, 2 tablespoons of margarine and a dash of pepper, along with 1/2 pound of cubed Velveeta, 1/3 pound of shredded sharp Cheddar cheese and 1/3 pound of shredded Colby Jack cheese. Mix together, while adding 4 tablespoons of whole milk. Pack the mixture down into the prepared baking dish, and top with 1/3 pound of shredded mild Cheddar cheese. Bake for 20 to 25 minutes, or until the cheese is lightly browned.
To make sour cream and chive mashed potatoes, peel and cube 5 russet potatoes, and cover them with water in a saucepan. Bring them to a boil, and cook about 25 minutes or until tender. Mash the potatoes with 1/3 cup plus 1 tablespoon of warm milk, 4 tablespoons of butter and 1/2 teaspoon of pepper. Stir in 1/2 cup of sour cream, and season with salt to taste. Top the potatoes with 1/2 cup of chopped chives.
