Sweet vinegar peppers are green peppers that are sliced or whole and pickled in a vinegar mixture. The peppers are cooked in a mixture of sugar and vinegar, drained and jarred. The remaining vinegar is seasoned with a combination of garlic, pepper and water that is poured over the peppers.
The jars are topped with olive oil.
Sweet vinegar peppers are an Italian specialty that are available in hot or sweet varieties. Some restaurants make their own, generally without using chemical additives or preservatives. Companies such as Pastene produce sliced green vinegar bell peppers that are sold in supermarkets or specialty stores. They are preserved to maintain their crunchy texture and flavor.
