To make pimento cheese biscuits, make a pimento cheese spread, and then add it to the center of buttermilk biscuits. Ingredients needed include extra sharp yellow cheddar cheese, mayonnaise, diced roasted pimentos, cayenne powder, kosher salt, ground black pepper, all-purpose flour, baking powder, baking soda, unsalted butter, cold buttermilk, heavy cream and salted butter.
Mix the cheese, mayonnaise, pimentos, cayenne powder, salt and pepper together in a bowl. Let this sit up to 24 hours in the refrigerator. Grease a baking sheet with butter. Sift together the flour, baking powder, baking soda and salt. Add the unsalted butter to the mixture until it has a course meal texture. Put the buttermilk in the mixture until it becomes a dough. Pat the dough flat, and then cut it into 2-inch rounds. Put the rounds on the greased baking sheet, and sprinkle the tops with black pepper. Bake at 450 degrees Fahrenheit for about 12 to 15 minutes. After the biscuits are done, brush the tops with melted salted butter. Finish the recipe by cutting each biscuit in half and scooping the pimento cheese mix between the two halves.
