For slow cooker London broil, organize 2 to 3 pounds of London broil, 1 vedalia onion, 4 white potatoes, 3 celery stalks and 4 carrots. Also gather 4 cups of low sodium fat-free beef broth and a package of common onion soup mix. Cook on low for approximately 8 hours.
Arrange the slow cooker on a safe surface. If the unit comes with a cooking rack, set it aside for this recipe, as you want the protein to remain immersed in the liquid. Place the London broil in the crock pot and cover the top of it with the soup mix. On a cutting board, quarter the vedalia onion and each of the potatoes. Next cut the carrots and celery stalks on a slant.
Place the onion quarters on top of the seasoned meat followed by the celery, carrots and potatoes, in that order. Pour the 4 cups of beef broth into the slow cooker, being careful not to pour it directly over the meat and vegetables, as this may wash the onion soup seasoning off of the meat. Plug in the slow cooker, turn it on low and then place the cover on top, cooking for the allotted 8 hours. Be careful to limit the number of times you remove the cover to retain interior heat. This recipe is delicious served over egg noodles.
