Recipes for slow cooker French toast include Betty Crocker?s caramel apple French toast or Rachel Ray?s French toast casserole. The recipes require 2 1/2 to 3 1/2 hours cooking time and provide a good way to use stale bread.
For the caramel apple French toast, cut the bread into cubes, and dry it in a 300 degree Fahrenheit oven for 30 minutes. Line the slow cooker with foil, and spray it with cooking oil. Break eight eggs into a large bowl, and add a pint of half-and-half, 1/2 cup milk, 1/3 cup brown sugar, 1 1/2 teaspoon vanilla and 1/2 teaspoon ground cinnamon. Beat the eggs, and mix in 10 cups of bread cubes. Transfer half of the mixture to the slow cooker.
Peel and chop 3 apples. Cook the apples in 2 tablespoons of butter for about five minutes. Mix 6 tablespoons butter, 1 teaspoon cinnamon and 1 cup each of chopped pecans and brown sugar until crumbly. Place half the apples over the bread cubes and top with the pecan mix. Repeat the layers.
For the Rachel Ray recipe, prepare the slow cooker as before. Cut a loaf of bread into 1-inch cubes and dry it. Place 8 eggs, 1 1/2 cup milk, 1/2 cup cream, the zest of an orange and 1/2 cup chopped walnuts in a bowl, and mix well. Add 1/4 cup maple syrup and the bread cubes. Place the mix in the slow cooker, and dot with butter.
