Breakfast recipes for slow cookers include sausage and sweet pepper hash, as well as steel-cut oatmeal. To make the hash, quarter 1 12-ounce of package of cooked smoked chicken sausages with apples lengthwise, then chop them into 1/2-inch pieces.
Brown the sausage in a skillet over medium heat for approximately five minutes. Set the sausage aside, then add 1 teaspoon of olive oil, and reduce the heat to medium-low. Add 1 1/2 cups of sliced sweet onion, and cook the mixture until its soft.
Spray the bottom of a slow cooker with non-stick cooking spray, and add the sausage and onions with 2 teaspoons of fresh thyme, 1/2 teaspoon of ground black pepper and 1/4 cup of reduced-sodium chicken broth. Cook the hash on low heat for five to six hours. Add 1 1/2 cups of chopped sweet peppers and 1/2 cup of shredded Swiss cheese, and cook for an additional 15 minutes on the high setting. Garnish with 2 teaspoons of fresh tarragon or parsley and serve.
To make steel-cut oatmeal, combine 6 cups of water, 2 cups of steel-cut oats and 1 teaspoon of salt in a slow cooker. Cook the oatmeal for three to 3.5 hours on the high setting or 5.5 to six hours on the low setting. Serve the oatmeal with your choice of toppings, such as dried fruits, nuts, brown sugar, milk or cream.
