In a medium microwave-safe bowl, mix 1 cup refrigerated mashed potatoes, 1 cup milk, 3 tablespoons honey and ¼ cup softened butter. Microwave uncovered for 1 minute on high or until the mixture reaches 110 F. Add to the flour mixture, stirring until blended. Mix in 2 eggs.
Add 2 cups flour to potato mixture and stir until it becomes soft dough. Knead the dough until smooth and springy on a floured surface. Add additional flour to keep hands from sticking to dough. Place dough in a greased bowl; flip dough to have greased side on top. Cover and let it rise in a warm place until doubled in size, which takes about 1 hour. Punch down dough and let it rest for 5 minutes.
Coat two 8-inch square pans with cooking spray. Divide dough equally into 18 portions. Shape each portion into a ball, and place in pans. Spray the top of dough balls with cooking spray. Cover and let rise until doubled, about 30 minutes.
Bake in a 350 F oven for 30 minutes or until browned. Melt 2 tablespoons butter; brush on top of rolls.Learn more about Bread
