To make roast cod with crisp potatoes, preheat oven to 450 degrees Fahrenheit. Start by roasting 3 pounds Yukon gold or new potatoes in 3 tablespoons olive oil, salt and pepper. Roast the potatoes for 20 minutes, turn and continue roasting for 10 additional minutes. Remove the roasting pan from the oven and move the potatoes to the sides of the pan. Pat dry 6 6-ounce skinless cod fillets. Place the fillets in the center of the pan and drizzle with 2 teaspoons olive oil. Add salt and pepper to taste. Return the pan to the oven. Roast for about 10 minutes or until the cod fillets look flaky and evenly covered. Drizzle with lemon juice and serve.
For cod with fennel and orange, sprinkle 2 cod fillets with salt. Place each fillet in a microwavable, plastic bag. In each bag, place 1/2 cup fennel, 1/8 teaspoon crushed red pepper, 2 strips orange rind, 2 sprigs thyme and 1 sliced garlic clove. Then, add 1 tablespoon dry white wine and 1/2 teaspoon melted butter. Seal each bag and microwave at power level 7 for about 5 minutes. Remove the fish from the bag and top with olive oil, finely chopped fennel fronds and orange sections.
