A simple way to make duck sauce is to combine 1 cup of applesauce, 1/2 cup apricot preserves, 2 tablespoons of honey, 2/3 cup of cider vinegar and 1/4 teaspoon of crushed garlic. Place the mixture into a small saucepan, and cook over medium heat until heated through, stirring constantly.
Cool the duck sauce, then serve. This recipe can also use plum preserves, crushed red peppers or other ingredients the cook deems appropriate.
Another easy way to make duck sauce is to combine 1 cup of peach or apricot preserves, 4 1/2 tablespoons of white vinegar, 2 tablespoons of minced fresh peeled ginger, 2 tablespoons of minced scallions, tablespoon of tamari soy sauce, 2 tablespoons of water and a large teaspoon of toasted sesame oil.
Place these ingredients save the sesame oil in a small saucepan over medium heat. Whisk as they are brought to a simmer, then reduce the heat to low and summer uncovered for 5 minutes. Add the sesame oil and stir.
Place the sauce in a food processor or blender and pulse so the fruit is broken up but the sauce still has some texture. Pour the sauce into a bowl, then put in the refrigerator. Serve at room temperature.
This duck sauce recipe is good in the refrigerator for about five days.
