A simple three bean salad recipe offered by Food Network uses green beans, wax beans and kidney beans. It also includes red onion, cider vinegar, vegetable oil and assorted seasonings. The recipe takes 1 hour and 15 minutes to prepare, and yields 4 to 6 servings.
Salt a pot of water, and bring to a boil. Place ice water in a large bowl. Take 1/2 pound green beans and 1/2 pound wax beans. Trim and cut in half crosswise. Rinse and drain the contents of a 15-ounce can of kidney beans. Pour all three beans into the pot, and simmer for four to five minutes. Remove the pot from the heat, and pour the beans into the ice water to halt cooking. Drain the beans.
Mince and soak 1/2 small red onion in cold water for five minutes prior to draining. In a medium-sized bowl, mix the beans and the onion. Combine 1/4 cup sugar, 1/3 cup vinegar, 1/4 cup vegetable oil and 1/2 teaspoon kosher salt into a saucepan, and bring to a low boil. Drizzle the liquid mixture over the beans. Let sit at room temperature for approximately one hour, stirring occasionally. Prior to serving, season with salt, freshly ground black pepper and 1 tablespoon minced flat-leaf parsley.
