Some simple tea sandwich recipes are salmon-cucumber tea sandwiches, vegetable medley tea sandwiches, prosciutto-asparagus tea sandwiches and Kentucky Benedictine tea sandwiches. Some more easy recipes include tomato-cheddar, cucumber-butter and olive-focaccia.
Make salmon-cucumber tea sandwiches by beating together one 8-ounce package of softened cream cheese, 3 tablespoons of fresh lemon juice, 1 tablespoon of grated white onion and 1/2 teaspoon of kosher salt. Spread bread slices with the cream cheese mixture, and top with English cucumber slices and sliced smoked salmon. Sprinkle with fresh dill. To make the vegetable medley tea sandwiches, follow the same steps to make the spread, but layer with yellow squash, cucumber and radish slices instead of salmon. Sprinkle with black pepper to taste.
Use focaccia bread for a different twist on typical tea sandwiches. Mix together 1 cup of chopped olives and 3 tablespoons of minced parsley. Cut a loaf of focaccia bread in half, drizzle one side with olive oil, and spread on the olive and parsley mixture. Add sliced provolone cheese to the other piece of focaccia, combine bread slices, and cut into small squares. To make tomato-cheddar tea sandwiches, spread mayo onto two slices of bread, layer with tomato, watercress and aged cheddar, and cut into small sandwich slices. Remove the crusts before serving.
