To make a simple yet flavorful tartar sauce, combine 1 cup of mayonnaise with 6 tablespoons of relish or finely chopped pickles and 2 tablespoons of fresh lemon juice. Chill the sauce until you're ready to use it and store it in an airtight container in the refrigerator.
You can keep the sauce simple but still find easy ways to vary it. For example, add finely chopped fresh herbs, such as parsley or chervil, along with chopped capers and 1 tablespoon of chopped shallots for a quick variation on classic tartar sauce. Add a pinch of cayenne pepper, if desired, for a little heat. Adding 2 tablespoons of chopped fresh tarragon and 1 teaspoon of drained, chopped anchovy fillets transforms the basic tartar sauce into a remoulade.
Instead of using relish to make your sauce, use finely chopped dill pickles, 2 teaspoons of pickle brine, 2 chopped green onions and 1/4 teaspoon of chipotle powder for a South-of-the-Border take on tartar sauce. Give the sauce an Asian flair by stirring in 1 tablespoon of chili sauce, 2 teaspoons of lime juice and 1 tablespoon of chopped fresh cilantro. Alternatively, add a Tuscan spin to your tartar sauce by adding 2 tablespoons of Italian dressing and 2 tablespoons of chopped fresh basil.
