For a simple spinach dip, gather 10 ounces frozen spinach, 1/2 cup sour cream, 1/2 cup mayonnaise, 1 cup grated Parmesan cheese and 1 cup of grated cheddar. If desired, also procure approximately 14 ounces of artichoke hearts. Bake the dip at 350 degrees Fahrenheit for roughly 30 minutes.
Defrost the spinach in the microwave for five minutes, and remove it. Transfer the spinach to a bowl, and extract the excess moisture using either a clean towel or paper towels by wringing it tightly. Next, open the cans of artichoke hearts, and drain out the marinating liquid. Chop them coarsely either by hand or in the food processor. Add all the ingredients, except the cheddar, into a good-sized mixing bowl.
Once the contents are combined thoroughly, transfer the mixture to a greased casserole dish. Spread the mixture out evenly inside. Next, spread the grated cheddar over the top of it, and place the casserole dish into the preheated oven. Bake the dip for the required 30 minutes, then check to see that it is done. The dip should be bubbling all along the sides and the cheddar topping browned.
For an elegant touch, keep the spinach dip warm for guests in a chafing dish set to low. Serve with a favorite cracker, bread variety or bagel chip.
