AllRecipes.com offers a recipe called Easy Paella, and the Food Network offers a Rachael Ray recipe called Perfect Paella. The prep time for Easy Paella is 30 minutes, and the prep time for Perfect Paella is only 15 minutes.
For Easy Paella, mix 2 tablespoons of olive oil, 1 tablespoon of paprika, 2 teaspoons of dried oregano, and salt and pepper to taste. Cut 2 pounds of boneless chicken breasts into 2-inch pieces and coat with the mixture. Cover the bowl, and place it in the refrigerator.
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Stir in 3 cloves of crushed garlic, 1 teaspoon of crushed red pepper flakes and 2 cups of uncooked short-grain white rice. Cook for three minutes, coating the rice with oil. Stir in a pinch of saffron threads, a bay leaf, half a bunch of chopped Italian parsley, 1 quart of chicken stock and the zest of 2 lemons. Boil the mixture, cover, reduce the heat to medium low and simmer for 20 minutes.
While the mixture is simmering, heat 2 tablespoons of olive oil in a separate skillet. Stir in the marinated chicken and onion, cooking for five minutes. Add 1 chopped red bell pepper and 1 pound of crumbled chorizo with the casings removed. Cook for five minutes, and then add 1 pound of peeled, deveined shrimp. Cook shrimp until it is pink on both sides. Finally, serve the rice mixture topped with the meat and shrimp.
