Simple shrimp recipes include spitfire shrimp, a stir-fry recipe, classic shrimp scampi, Southern-style shrimp and grits, and low-country shrimp pilaf. Save time and effort by using peeled and deveined shrimp, unless the recipe specifically calls for unpeeled shrimp.
Rachael Ray's simple shrimp recipe is cooked in a large skillet pan and takes 15 minutes to prepare and cook. In a bowl, combine juice from one lime, 1/4 cup cayenne hot pepper sauce, 1 tablespoon ground cumin, 1/2 teaspoon red pepper flakes and 1 tablespoon crab boil seasoning. Cook chopped shallots and garlic in hot olive oil and butter for one minute, add 2 pounds of jumbo shrimp, and continue cooking for three minutes until the shrimp is firm and pink. Place the cooked shrimp into the pepper sauce mixture, coating well, and serve it warm or cold.
To make shrimp scampi for two people, heat 1 teaspoon olive oil in a large skillet pan. Place 3/4-pound raw shrimp into the pan along with one thinly sliced green onion, one chopped garlic clove, chopped fresh herbs, 1 tablespoon lemon juice and 1/8 teaspoon salt. Cook for several minutes, stirring frequently, and remove the food from the heat when the shrimp is pink. Serve with a sprinkling of grated Parmesan cheese on top.
