Taste of Home offers a recipe for a creamy dill sauce that works well with salmon. The Betty Crocker recipe website also features a recipe for salmon topped with a lemon herb butter sauce.
The recipe for creamy dill sauce requires 1/3 cup each of sour cream and mayonnaise, 1 tablespoon of finely chopped onion, 1 teaspoon each of lemon juice and horseradish and 3/4 cup of dill weed, as well as 1/4 teaspoon of garlic powder and black pepper to taste. To prepare the sauce, combine all of the ingredients and stir until it is blended and smooth.
Another sauce you can make to accompany salmon uses 2 tablespoons of finely chopped shallots, 1/4 cup of dry white wine, 3 tablespoons of lemon juice, 6 tablespoons of cold butter and 1 tablespoon of fresh chopped dill. Add 1 tablespoon of finely chopped chives and 1/8 teaspoon of black pepper.
To prepare, combine shallots, wine, and lemon juice in a small saucepan over medium-high heat and bring to a boil. Reduce the heat to medium and allow the mixture to simmer for five to seven minutes, stirring occasionally until the mixture has reduced to about 3 tablespoons. Remove from heat and stir in the cold butter, 1 tablespoon at a time, until it is well blended. Stir in the dill, chives and pepper, and cover the sauce so that it remains warm.
