To make the coleslaw, combine 1 cup of mayonnaise with 1 tablespoon each of Dijon mustard, red wine vinegar and sugar. Stir in the juice from 1/2 of a lemon, and add extra-virgin olive oil, salt and black pepper to taste. Incorporate the contents of 1 packet of shredded cabbage and carrot mix.
To prepare the pot roast with vegetables, scatter salt and black pepper all over a 4-pound piece of beef chuck roast before thoroughly browning the beef with 2 tablespoons of olive oil in a large pot over medium-high heat. Drench the beef with 1 can of crushed tomatoes and 1 cup of water. Arrange 2 halved yellow onions, 2 chopped garlic cloves, 2 celery stalks and 1 cup of halved button mushrooms around the meat, and toss in 4 sprigs of thyme, 2 sprigs of rosemary and 2 bay leaves. Splash in 1 tablespoon of olive oil, and add a sprinkling of salt and pepper.
Lower the heat, and allow the mixture to stew for approximately three hours, spooning the liquid over the beef at 30-minute intervals. When the beef is tender, slice it and serve it on a plate. Accompany the beef with the vegetables and the gravy.Learn more about Cooking
