Coleslaw and pot roast with vegetables are examples of simple recipes from "Tyler's Ultimate" show on Food Network. The coleslaw takes 10 minutes to prepare, while the pot roast requires 20 minutes of hands-on time.
To make the coleslaw, combine 1 cup of mayonnaise with 1 tablespoon each of Dijon mustard, red wine vinegar and sugar. Stir in the juice from 1/2 of a lemon, and add extra-virgin olive oil, salt and black pepper to taste. Incorporate the contents of 1 packet of shredded cabbage and carrot mix.
To prepare the pot roast with vegetables, scatter salt and black pepper all over a 4-pound piece of beef chuck roast before thoroughly browning the beef with 2 tablespoons of olive oil in a large pot over medium-high heat. Drench the beef with 1 can of crushed tomatoes and 1 cup of water. Arrange 2 halved yellow onions, 2 chopped garlic cloves, 2 celery stalks and 1 cup of halved button mushrooms around the meat, and toss in 4 sprigs of thyme, 2 sprigs of rosemary and 2 bay leaves. Splash in 1 tablespoon of olive oil, and add a sprinkling of salt and pepper.
Lower the heat, and allow the mixture to stew for approximately three hours, spooning the liquid over the beef at 30-minute intervals. When the beef is tender, slice it and serve it on a plate. Accompany the beef with the vegetables and the gravy.
