Vlasic's summer time sauerkraut salad and sauerkraut salad from Taste of Home magazine are some simple sauerkraut salad recipes. The salads use carrots, green pepper, relish and apple cider vinegar.
To make the summer time sauerkraut salad, combine 1 jar of rinsed and drained Vlasic old-fashioned sauerkraut, 1 cup of shredded carrot, 1 chopped sweet red or yellow pepper, 1/2 cup of thinly sliced green onions and 1/2 cup of chopped fresh parsley, as well as 1/4 cup of Vlasic sweet relish, 2 tablespoons of apple cider vinegar and 1/2 teaspoon of celery seed. Add 1 to 4 tablespoons of Vlasic sweet relish juice, or enough to moisten the salad. Cover the salad, refrigerate it for 2 hours, and stir it occasionally.
For the Taste of Home sauerkraut salad, mix 1 can of rinsed and drained sauerkraut, 1 cup of grated carrots, 1 cup of chopped celery, 1 cup of chopped green pepper, 1 cup of chopped onion and 1 jar of diced and drained pimientos in a bowl. In another bowl, combine 3/4 cup of sugar and 1/2 cup of canola oil, pour it over the vegetables, and mix well. Cover the salad and refrigerate it for at least 8 hours.
