Egg drop soup, cheesecake, popovers and egg casserole are four simple recipes that include eggs. These recipes call for less than eight ingredients each and require minimal cooking skills.
To make egg drop soup, mix 1/2 cup of chicken stock with 1 tablespoon of cornstarch. Place 3 1/2 cups of chicken stock, 1/2 teaspoon of grated ginger, 1 tablespoon of soy sauce, 3 chopped green onions and 3/4 cup of mushrooms in a pot along with 1/4 teaspoon of white pepper. Bring the soup to a boil, and stir in the cornstarch mixture. Reduce the heat to a simmer, and stir in 3 lightly beaten eggs. Remove the soup from heat, and serve it with chopped green onions.
To make a cheesecake, beat 16 ounces of cream cheese with 1/2 cup of sugar and 1/2 teaspoon of vanilla. Beat in 2 eggs, and pour the filling into a graham cracker crust. Bake the cheesecake for 40 minutes at 325 F, let cool and refrigerate for three hours.
To make popovers, beat 2 lightly beaten eggs with 1 cup of flour, 1 cup of milk and 1/2 teaspoon of salt until smooth. Bake the mixture in greased custard cups for 20 minutes at 450 F. Reduce the oven temperature to 350 F, and bake the popovers for an additional 20 minutes.
To make an egg casserole, layer 6 slices of torn white bread in a greased baking pan, and top it with 1 pound of cooked sausage and 1 cup of shredded cheddar cheese. Beat 6 eggs with 2 cups of milk, 1 teaspoon of salt and 1/4 teaspoon of pepper until smooth, and pour the mixture into the pan. Bake the casserole for 40 to 45 minutes at 350 F.
