To make easy herb-roasted potatoes, heat your oven to 375 degrees Fahrenheit. Line a baking sheet with oil and grease the foil lightly. Peel 1 1/2 pounds of red or Yukon gold potatoes and cut them into wedges.
Make a seasoning mix by combining 1/2 teaspoon of dried dillweed, 1/2 teaspoon of dried, crumbled rosemary and 2 teaspoons of dried parsley flakes. You may also substitute the dried parsley flakes for 2 tablespoons of fresh chopped parsley. Add 1/4 teaspoon of garlic powder and 1/2 teaspoon of onion powder if desired.
Mix the potatoes, seasoning mix, 1 tablespoon of melted butter and 1 tablespoon of vegetable oil together in a large container, such as a food storage bag, and mix all ingredients until the potatoes are covered evenly. Place the potatoes on the pan in one single layer, and place them in the oven for 45 to 55 minutes. The finished potatoes should be browned and tender.
To make easy cheddar mashed potatoes, cut 2 pounds of Yukon gold potatoes into 1-inch cubes. Place the potatoes in a medium saucepan, cover them with water and bring the water to a boil. Allow the potatoes to boil until they are tender, for approximately 15 minutes. Drain the water and put the potatoes in a large bowl. Add 4 tablespoons of butter, 2/3 cup shredded of white sharp cheddar cheese and 1/2 cup milk, and mash all ingredients together. Add salt and pepper to taste.
