Some simple recipes for cooking chicken breast include baked breasts, chicken Parmesan and stuffed chicken breasts. These recipes have fewer than 15 minutes each of active time and bake in roughly 30 to 40 minutes.
To bake chicken breasts, coat them lightly with olive oil or melted butter. Season them with salt, pepper and other seasonings to taste. Garlic, seasoned salt, oregano and lemon are common seasonings for chicken breasts. Place the breasts in a shallow casserole dish, then cover lightly with parchment paper that has been brushed with butter or olive oil on the side facing down. Bake for up to 40 minutes, or until the chicken reaches an internal temperature of 165 F.
For chicken Parmesan, place breasts into a dish, and cover with 15 ounces of spaghetti sauce, then bake until the chicken is done. Meanwhile, cook spaghetti in boiling water until soft, then drain. Serve the chicken breasts on a bed of spaghetti along with the extra sauce, then sprinkle shredded cheese on top.
To stuff chicken breasts, either carefully slice them partially through or pound them until they are thin enough to fold. Prepare a mixture of spinach, feta cheese, and garlic, then stuff inside of the chicken. Coat the chicken in bread crumbs, then bake until the chicken is done.
