Cheesy bacon mini meatloaves and cheesy turkey chili bake are two simple recipes that you can make ahead of time. Once prepared, these dishes are frozen until ready to be baked and served.
To make cheesy bacon mini meatloaves, whisk 2 eggs with 3/4 cup of milk. Mix in 1 1/2 pounds of ground beef, 6 ounces of stuffing mix, 3/4 cup of four-cheese blend, 1/3 cup of barbecue sauce and 3 sliced green onions. Shape into 6 patties and wrap a bacon slice around each patty's edge.
Wrap each patty in plastic wrap and seal in a freezer bag. Freeze until ready to use. To cook, place the patties on a greased baking sheet and bake at 375 F for 40 to 45 minutes.
To make a cheesy turkey chili bake, saute 1 1/4 pound of ground turkey and salt, to taste, until the meat is no longer pink. Add 1 ounce of taco seasoning, cannellini beans from two 19-ounce cans, green chilies from a 4.5-ounce can, corn from a 11-ounce can and 16 ounces of salsa. Stir to combine, and spread in a greased baking dish. Top with 2 cups of four-cheese blend, and cover the dish with greased foil.
Freeze the dish in greased foil cake pans placed in freezer plastic bags. Thaw overnight in the refrigerator and bake for 40 to 50 minutes at 350 F. If cooking from frozen, bake for 75 to 90 minutes.
