For the baked halibut steaks, preheat the oven to 450 degrees Fahrenheit and lightly grease a shallow baking dish. Heat 1 teaspoon of olive oil in a medium saucepan over medium heat. Stir in 1 cup of diced zucchini, 1/2 cup of minced onion and 1 clove of peeled and minced garlic. Cook and stir for about 5 minutes.
Remove the saucepan from heat and mix in 2 cups of diced fresh tomatoes, 2 tablespoons of chopped fresh basil, 1/4 teaspoon of salt and 1/4 teaspoon of pepper. Arrange 4 6-ounce halibut steaks in a single layer on the greased dish. Spoon equal amounts of the zucchini mixture on each of the steaks, and top with 1/3 cup of feta cheese. Bake for 15 minutes.
For the second baked halibut recipe, cut 1 pound of fresh halibut into 2 8-ounce pieces. Marinate them for 20 to 30 minutes in a glass baking dish with the juice from 1 lemon.
