Follow the Epicurious recipe for wassail by placing 1/2 inch of peeled and sliced fresh ginger, 12 whole cloves, 12 white peppercorns, 6 allspice berries and 3 cinnamon sticks on a cheesecloth. Bundle up the spices, and secure the package with kitchen string. Pour 1 gallon of apple cider and 6 ounces of cranberry juice into a large pot, and add the spice packet, along with 3/4 cup of light brown sugar. Simmer the mixture for 30 minutes. Prepare a serving of wassail by pouring 1 ounce of bourbon into a mug and topping it with the hot spiced cider.
Follow Martha Stewart's wassail recipe by cooking 1 cup of cider with a cheesecloth sachet containing 4 allspice berries and 2 cloves over medium-high heat for approximately three minutes. Turn off the heat, and allow the mixture to steep, covered, for 30 minutes. Add 2 tablespoons of maple sugar and 24 ounces of ale, and warm the mixture over low heat for eight minutes. Pour in 1/2 cup of Calvados, and continue to simmer the mixture for another three minutes. Discard the sachet, and serve the wassail.
