One simple recipe using canned chicken is chicken salad sandwiches. Canned chicken is combined with chopped fruits, vegetables, nuts and salad dressing before being served between bread slices.
To make chicken salad sandwiches, combine one 10-ounce can of drained chicken breast, 1/3 cup of halved seedless red grapes, 1/4 cup of finely sliced celery and 2 tablespoons of finely chopped onion in a large bowl. Also stir in 2 tablespoons of golden raisins, 2 tablespoons of dried cranberries and 1/3 cup of salad dressing. Make sure the ingredients are well combined, then cover the bowl and place it in a refrigerator for at least one hour.
Stir 2 tablespoons of sliced natural almonds into the chilled chicken mixture and lightly toast six slices of multi-grain bread. Place a leaf of lettuce on top of three of the toast slices, followed by a scoop of chicken salad. Top this with the other slice of toast and serve. For more spice, add a bit of cinnamon or curry to the chicken mixture. You can also substitute other types of bread, and croissants work very well with this recipe. You can also wrap the chicken salad in large lettuce leaves for a low carbohydrate version of the dish.
