A simple recipe for sweet potato pie from Epicurious calls for a filling that consists of mashed sweet potatoes, sugar, milk, eggs and butter. It also features the warm flavors of vanilla, dark rum, cinnamon and nutmeg.
To prepare the sweet potato pie, use a fork to pierce 1 1/4 pounds of sweet potatoes in a baking pan. Roast the sweet potatoes at 350 F for about 75 minutes or until they are soft. Let the sweet potatoes cool before scraping out the flesh, and putting it into a bowl. Thoroughly mash the sweet potatoes.
Heat 1/2 stick of unsalted butter in a saucepan, and dissolve 3/4 cup of sugar in the melted butter. Pour this mixture into the mashed sweet potatoes, and beat in 3 large eggs and 3/4 cup of milk to form a smooth mixture. Incorporate 1 tablespoon each of dark rum and flour, 1 teaspoon of vanilla, 1/2 teaspoon of cinnamon, and 1/4 teaspoon each of grated nutmeg and salt. Transfer the mixture into an unbaked 9-inch pie shell. Place the pie in a baking pan on the lower rack of the oven, and bake it at 400 F for approximately 40 minutes or until the sweet potato custard is just set.
