To make Food Network's chicken with pineapple sauce recipe, place 1 3-pound roasting chicken that has been cut into 8 pieces into the bottom of a saucepan or a casserole dish. Season the chicken with 1 teaspoon coarse salt and 1/2 teaspoon freshly ground black pepper, and top with 1 ripe peeled, cored and chopped pineapple, its juice, 2 thinly sliced medium onions, 1 seeded and chopped red bell pepper, 2 minced garlic cloves, 1 cinnamon stick and 1 bay leaf. In a bowl, whisk together 1/2 cup olive oil, 1/2 cup white wine vinegar and 1/2 cup dry sherry. Pour the liquid evenly over the chicken. If needed, add 1 to 2 cups chicken stock to cover the chicken, and cover loosely. Simmer over low heat for 45 minutes, or until the chicken is tender and the sauce is reduced. Remove the cinnamon stick and the bay leaf.
