An easy recipe for panettone from King Arthur Flour features a short list of ingredients and straightforward instructions. This panettone derives flavor from ingredients such as golden raisins, vanilla extract and lemon zest.
To make a simple panettone using the King Arthur Flour recipe, stir 1 tablespoon of instant yeast into 1/3 cup of lukewarm water. Whisk in 1/4 cup of granulated sugar, 3 large eggs, 1 stick of softened unsalted butter, 1 teaspoon of salt and 1/2 teaspoon of lemon zest. Slowly add 2 1/2 to 3 cups of all-purpose flour until the mixture forms a soft dough, and knead the dough on a floured surface until smooth. Transfer it to a greased bowl, cover it, and allow it to sit for 30 minutes or until it expands to twice its original size.
Press and deflate the dough, and put it on a floured surface before incorporating 1 cup of golden raisins. Roll the dough into a ball, and set it aside in a large buttered casserole pan for another 30 minutes or until the dough doubles in size again. Bake the panettone at 400 F for 15 minutes before lowering the heat to 350 F. Continue to bake the panettone for another 30 minutes or so. It may be necessary to protect the panettone with foil if it browns too quickly during the baking process.
