What Is a Simple Recipe for Making Vegetarian Chili?


One simple vegetarian chili recipe requires 1 tablespoon vegetable oil, 2 cups chopped onion, 1/2 cup of both yellow and green peppers, two minced garlic cloves, and 1 tablespoon brown sugar. The recipe also needs two 16-ounce cans each of stewed tomatoes and black beans.

Other ingredients needed include one 16-ounce can each of pinto beans and kidney beans as well as 1 1/2 tablespoons chili powder, 1 teaspoon each of cumin and oregano, and 1/2 teaspoon each of salt and black pepper. All canned beans used in this recipe should be drained and rinsed prior to use.

The actual preparation is simple and begins with heating the vegetable oil in a Dutch oven. Then, saute the bell peppers, onion, and garlic for five minutes. After these ingredients are tender, add the sugar and the rest of the ingredients. Bring the mixture to a boil, and then reduce to a simmer for 30 minutes. Garnish the chili with cheese or sour cream, and serve over brown rice if desired. The amount of cumin and chili powder can be adjusted as desired, and coarsely chopping the vegetables or swapping in diced tomatoes for stewed tomatoes can add to the texture of the chili.
