A simple recipe to make great meatballs that can be frozen for future meals is Taste of Home's make-ahead meatballs. This recipe contains only ground beef, Worcestershire sauce, eggs, breadcrumbs and onion.
Start the meatballs by adding four lightly beaten eggs, 2 cups of dry bread crumbs, 2 teaspoons of Worcestershire sauce and 1/2 cup of finely chopped onion in a bowl. Season with 1 tablespoon of salt and 1/2 teaspoon of white pepper. Crumble 4 pounds of lean ground beef over the mixture, and mix everything well. Roll the meat mixture into balls 1 inch in diameter. Bake the meatballs for 10 to 15 minutes at 400 degrees Fahrenheit. Allow the meatballs to cool before placing them in a freezer container. They can be reheated at 350 degrees Fahrenheit for later use.
Another recipe calls for a mixture made from one egg, 1/4 cup of milk, 1/3 cup of dry breadcrumbs and one medium chopped onion seasoned with 1 teaspoon of salt and 1/8 teaspoon of pepper. Add 1 pound of lean ground beef, and mix with your fingers. Shape the meat mixture into balls, and bake the mixture uncovered at 400 degrees Fahrenheit for 15 minutes. Place the tray containing the meatballs in the freezer for 20 minutes until they are hard enough not to become misshapen when placed in a freezer container.
