A simple recipe for mac and cheese is available on FoodNetwork.com from the Food Network Kitchen. The recipe takes about 30 minutes to complete and calls for ingredients such as elbow macaroni, half-and-half and cream, cheddar cheese and Gruyere cheese.
Boil 1 pound of elbow macaroni in a large pot of salted water for about 6 minutes until al dente. Strain the pasta and reserve 1 cup of the pasta water, setting it aside for later use. Heat 2 1/2 cups of half-and-half with 1/8 to 1/4 teaspoon of cayenne pepper as desired in a large saucepan over medium heat just up to a simmer.
Continue simmering for about 15 minutes until the half-and-half reduces to about 1 1/2 cups. Add 1 pound of room temperature cream cheese to the pan and stir until melted. Add 8 ounces of shredded sharp cheddar and 3 ounces of shredded Gruyere and whisk until the cheese fully melts and the sauce is smooth.
Add the drained macaroni to the cheese sauce and stir to combine. Thin the sauce as necessary with the reserved pasta water, bringing it to the desired consistency. Season to taste with salt and pepper if necessary and serve the dish hot.
