Food Network has a simple and easy-to-follow ham, cheese and potato casserole recipe made with russet potatoes, cooked ham and Monterey Jack cheese. The recipe makes 12 servings.
To make Food Network's recipe, preheat the oven to 375 degrees F. In a skillet, saute 4 tablespoons butter and 1/2 diced yellow onion for three to four minutes or until the onions start to soften. Add 1/3 cup all-purpose flour, and cook for two minutes or until the mixture turns golden brown. Add 1 1/2 cups half-and-half and 1 1/2 cups milk. Cook for three to four minutes, and add freshly ground black pepper.
Slice 2 pounds washed russet potatoes thinly, and grease a baking dish. Add half the sliced potatoes and 1 1 1/2 cups diced cooked ham. Sprinkle 1 cup grated Monterey Jack cheese, and top with half the onion and milk mixture. Repeat with the rest of the potatoes, 1 1/2 cups cooked ham, 1 cup grated Monterey Jack cheese and the rest of the sauce. Season with extra ground black pepper.
Cover, and bake for 40 minutes. Uncover, and bake for another 20 to 30 minutes, or until the cheese is golden brown. Top with chopped fresh parsley.
