To make easy gingerbread cookies from PBS, combine 1 package of butterscotch pudding mix with 3/4 cup of butter or margarine and 3/4 cup of brown sugar. Beat in 1 egg, and then mix in 2 1/4 cups of flour, 1 teaspoon of baking soda, 3 teaspoons of ground ginger and 1 1/2 teaspoons of cinnamon. Once the dough is well-blended, chill it for 10 minutes before rolling it out on a floured surface. Cut out shapes with cookie cutters, and bake the cookies on a lightly greased sheet at 350 degrees Fahrenheit for 10 to 12 minutes.
Another simple recipe is provided courtesy of Reader's Digest, calling for 2 1/4 cups of all-purpose flour, 1/2 cup of granulated sugar, 1/2 cup of softened butter, 1/2 cup of molasses and 1 egg. Beat the ingredients together, and then mix in 1 1/2 teaspoons of ground cinnamon, 1 teaspoon of ground ginger, 1/2 teaspoons of ground cloves, 1/2 teaspoon of ground nutmeg and 1/2 teaspoon of salt. Add 1 teaspoon of baking powder and 1/2 teaspoon of baking soda to the dough, and chill it, covered, for one hour. Roll out, and cut out shapes in the dough before baking the cookies at 350 degrees Fahrenheit for eight minutes.
