To make easy gingerbread cookies from PBS, combine 1 package of butterscotch pudding mix with 3/4 cup of butter or margarine and 3/4 cup of brown sugar. Beat in 1 egg, and then mix in 2 1/4 cups of flour, 1 teaspoon of baking soda, 3 teaspoons of ground ginger and 1 1/2 teaspoons of cinnamon. Once the dough is well-blended, chill it for 10 minutes before rolling it out on a floured surface. Cut out shapes with cookie cutters, and bake the cookies on a lightly greased sheet at 350 degrees Fahrenheit for 10 to 12 minutes.

Add 1 teaspoon of baking powder and 1/2 teaspoon of baking soda to the dough, and chill it, covered, for one hour. Roll out, and cut out shapes in the dough before baking the cookies at 350 degrees Fahrenheit for eight minutes.Learn more about Desserts
