Taste of Home has a simple recipe to make chicken stew in a slow cooker. It has a preparation time of 10 minutes and a cook time of fewer than five hours. The recipe uses 14 ingredients and serves 10 people.
To prepare slow-cooker chicken stew, first cut 2 pounds boneless, skinless chicken breast into cubes. Then peel and cut 3 cups potatoes, and chop 1 cup of onion, 1 cup celery and 1 cup carrot. Place these ingredients in a 5-quart slow cooker with 2 14 1/2-ounce cans of reduced-sodium chicken broth and a 6-ounce can of tomato paste. Mix in 1 teaspoon paprika, 1/2 teaspoon pepper, 1/2 teaspoon rubbed sage and 1/2 teaspoon dried thyme. Set covered slow cooker to high, and cook for four hours. Combine 1/4 cup cold water with 3 tablespoons cornstarch, and mix until smooth. Add mixture to stew, and cook covered for an additional 30 minutes. If desired the finished stew can be sprinkled with Parmesan cheese.
A similar recipe from Food.com uses many of the same ingredients; however, instead of 2 pounds of chicken breast, it calls for 1 pound chicken breast with 1 pound chicken thighs. It also adds 2 cups mushrooms, 2 cups water, 1/2 teaspoon salt and 2 cups frozen green peas. If desired, 1 cup of firm tofu can be added during the last 30 minutes of cooking.
