Simple Cranberry Muffins

- 1 1/4 cup sugar
- 1/4 cup butter
- 2 eggs
- 1/2 cup milk
- 2 cups flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup walnuts
- 2 cups fresh or frozen cranberries
- Prepare the oven and muffin tins
- Blend the moist ingredients
- Mix the dry ingredients
- Make the batter
- Bake the muffins
Line a muffin tin with paper muffin cups. Turn on the oven to 350 degrees Fahrenheit.
Soften the butter and cream the butter and sugar together with an electric mixer. Beat in each egg separately.
In a separate bowl, mix the flour, baking powder and salt.
Beat the dry ingredients and the milk into the butter and sugar mixture. Alternate each ingredient, adding small amounts at a time. Chop the walnuts and cranberries and add them to the mixture.
Spoon the batter into the muffin cups. Bake the muffins for 25-30 minutes.
Some reviewers remarked that they successfully used dried cranberries when fresh or frozen berries were not available.
