A simple recipe for bread pudding consists of granulated sugar, eggs, milk, vanilla extract, Italian bread, light brown sugar, butter and pecans. To make a sauce, use granulated sugar, butter, an egg, vanilla extract and brandy.
Preheat oven to 350 degrees Fahrenheit, and coat a 13-by-9-by-2-inch pan. In a bowl, combine 2 cups granulated sugar, 5 large beaten eggs and 2 cups milk. Include 2 teaspoons pure vanilla extract, and drizzle over 3 cups cubed Italian bread. Allow the bread to stale overnight prior to use, and put the covered bread aside for 10 minutes.
In a separate bowl, stir 1/2 cup packed light brown sugar, 1/4 cup softened butter and 1 cup chopped pecans. Place the bread batter into the greased pan, and pour the brown sugar batter over the bread. Cook for 35 to 45 minutes. Take the bread pudding out of the oven, and set aside.
For the sauce, pour 1 cup granulated sugar, 1/2 cup melted butter, 1 beaten egg and 2 teaspoons pure vanilla extract into a saucepan. Simmer over a medium heat while stirring. Once the sugar melts, mix in 1/4 cup brandy. Spread the sauce over the bread pudding. Serve warm, or chill, and serve cold.
