A simple recipe for bourbon chicken combines maple syrup and bourbon with a chicken stock in which to cook chicken breasts with fresh thyme. The stock reduces to a thick sauce during cooking and the result is tender, juicy chicken with a sweet and sticky coating.
Maple Bourbon Chicken
This easy recipe is quick to prepare and cook, and pairs well with mashed potatoes and steamed green beans. It yields four servings.
Prep time: 5 min.
Cook time: 15 min.
Ready in: 20 min.
- 1 tbsp. olive oil
- 4 6-oz. skinless bone-in chicken breasts
- Salt and fresh ground black pepper
- 1 cup. chicken stock
- 2 tbsp. maple syrup
- 1 shot. bourbon
- 4 sprigs thyme
Step 1: Heat the olive oil in a skillet over a medium-high temperature.
Step 2: Season the chicken with plenty of salt and pepper then place into the skillet breast-side down to sear for up to 5 minutes, or until golden brown.
Step 3: In the meantime, whisk the chicken stock, syrup and bourbon together in a bowl. When the chicken is seared, add the stock mixture and the sprigs of thyme to the skillet. Cook for a further 8 to 10 minutes, turning the chicken occasionally until cooked through. Add more stock to the skillet if it reduces before the chicken is fully cooked.
Step 4: Serve the chicken hot, topped with the sticky sauce.
