Real Simple has a good and simple recipe for a basic quiche. Eggs, Gruyere cheese, onions, spices and fresh parsley are baked in a flaky pie crust.
To make basic quiche, fit a refrigerated pie crust into a 9-inch pie pan and place it on a baking sheet. Heat 1 tablespoon of oil in a large skillet over medium-low heat. Add 2 medium chopped onions and 1/2 teaspoon each of salt and pepper. Cook for approximately five to seven minutes, or until the onions are soft. Stir in 1 cup of chopped fresh flat-leaf parsley.
In a large bowl, whisk together 4 large eggs, 3/4 cup of half-and-half, 1/8 teaspoon of ground nutmeg and 1/4 teaspoon of salt. Stir in the onion mixture, along with 8 ounces of grated Gruyere. Pour the ingredients into the pie shell, and bake at 375 degrees Fahrenheit for 35 to 40 minutes, or until a knife inserted into the center comes out clean. Let the quiche sit for five minutes before serving it.
Drizzle 4 cups of mixed greens with 1 tablespoon of oil, and sprinkle it with salt and pepper. Serve a small portion of the greens alongside each serving of the quiche.
