To prepare the recipe, grease an 8-by-4-inch loaf pan before dusting it with flour, and set the pan aside. Preheat the oven to 350 degrees Fahrenheit. In a large bowl, beat 3/4 cup sugar, 1/2 cup softened butter and 2 eggs with a hand mixer on medium speed until creamy. Mash 2 medium-sized bananas, and add them to the bowl along with 1/2 teaspoon vanilla flavoring. Beat the mixture on low speed until mixed. Add 1 1/2 cups flour, 1 cup chopped walnuts, 1/2 teaspoon baking soda, 1/2 teaspoon salt and 1/4 teaspoon ground cinnamon, and stir to combine.
Pour or spoon the batter into the loaf pan, and bake until a toothpick inserted into the center of the loaf comes out clean, around 60 to 70 minutes. Remove the bread from the oven, and wait 10 minutes before removing the loaf from the pan and placing it on a cooling rack. Let the bread cool completely before serving it with a butter or margarine spread. Wrap the bread in plastic wrap, and refrigerate it overnight for an even more scrumptious treat.Learn more about Desserts
