Basic Banana Muffins

Preheat the oven to 375 degrees Fahrenheit. Grease a muffin pan or line the tins with paper muffin cups. Set the pan aside.
In a large mixing bowl, mash the bananas. Add the egg, oil, sugar and vanilla and mix until thoroughly blended.
Add the flour, baking soda, salt and cinnamon into the bowl and stir the ingredients into the liquid mixture.
Pour the batter into the prepared pans, filling each cup about halfway. Bake the muffins for 17 to 22 minutes until a toothpick comes out clean. When the muffins are finished, remove them from the oven and let them cool slightly before serving.
