To make shoo fly pie, mix 1 cup all-purpose flour, 2/3 cup brown sugar and 2 tablespoons lard. In a separate bowl, combine 1 cup molasses, 1 egg and 1 teaspoon baking soda. Pour the molasses mixture into a pie crust, top with the flour mixture and bake.
To make shoo fly pie with light brown sugar, mix 1 cup all-purpose flour, 3/4 cup light brown sugar, 4 tablespoons butter and 1/4 teaspoon salt until the mixture is crumbly. In a separate bowl, mix together 3/4 cup boiling water, 1 cup molasses, 1 teaspoon baking soda and 1 egg. Pour the molasses mixture into a prepared pie crust, and sprinkle the flour mixture evenly on top of the molasses. Bake the pie at 350 degrees Fahrenheit for 40 to 50 minutes.
To make shoo fly pie using dark brown sugar, mix 3/4 cup molasses, 1/2 cup hot water, 1 egg, 1 tablespoon all-purpose flour and 1/2 teaspoon baking soda, and pour the mixture into a pie crust. Combine 3/4 cup all-purpose flour, 1/4 cup each dark brown and granulated sugar and 2 tablespoons butter until the mixture crumbles, and pour the topping evenly over the molasses mixture. Bake the pie at 350 degrees Fahrenheit for 50 minutes.
