To make a simple pork dish for dinner, place a seasoned pork roast in a slow cooker with onions and sweet potato slices. Cover the roast with apple juice and cook on low for several hours. Serve the vegetables with the roast and use the pan drippings as gravy.
Peel and thinly slice 3 sweet potatoes and slice 1 large onion.
Season a boneless pork loin roast with 1/4 teaspoon of pepper and 1/2 teaspoon of salt. Place the roast into the slow cooker and add the sweet potatoes around the roast. Separate the onion into rings and add it to the slow cooker. Sprinkle the top of the vegetables and roast with 1/2 teaspoon of salt and 1 1/4 teaspoon of dried thyme. Pour 4 cups of apple juice over the roast and potatoes. Cover the slow cooker and cook on low for 6 to 8 hours or until meat and vegetables are tender.
Remove the roast from the slow cooker and slice on a cutting board. Using a slotted spoon, remove the vegetables from the slow cooker and place in a serving bowl. Place the drippings from the slow cooker in a bowl and serve them with the meal.
