A simple poached pear recipe is Mark Bittman?s Poached Pears with Vanilla. This light dessert makes 4 servings. Begin by combining 2 ? cups sugar and ? vanilla bean or 1 3-inch cinnamon stick with 5 cups water in medium saucepan over high heat.
Peel and core 4 pears, leaving the stems on. Add pears to the boiling water, and reduce to a gentle simmer. Cook until pears begin to become tender, about 10 to 20 minutes. While cooking, turn pears about every 5 minutes. Turn off heat, and let the pears cool in the liquid.
Transfer each pear to a serving plate. Take about 1 cup or less of poaching liquid, and spoon a little over each pear for serving.
About Food offers a different poached pears recipe, called Red Wine Poached Pear Recipe. To make this recipe, combine and bring to boil 1 ? cups red wine, ? cups granulated sugar, 2 tablespoons lemon juice, 2 teaspoons vanilla and 2 teaspoons cinnamon. Once boiling, turn down heat to a simmer, and add 4 to 6 peeled, cored and sliced pears. Simmer for 10 to 12 minutes; turn pears and simmer 8 to 10 more minutes, or until tender. Remove pears, and put them aside to cool.
Boil wine sauce until its liquid reduces by half. Pour wine sauce over pears, and serve with cr?me fraiche, marscapone or Devonshire cream.
