Orzo can be intimidating to those who have never prepared it. This simple recipe uses things like orzo, garlic, onion and Parmesan cheese to make a light side dish for any occasion.
To make cheesy orzo, gather the following ingredients. This recipe yields 4 servings.

- 2 tablespoons extra-virgin olive oil
- 1/2 small onion, finely chopped
- 2 garlic cloves, chopped
- 2, 14-oz. cans of chicken or vegetable broth or stock.
- 2 cups orzo
- 1/2 cup grated Romano or Parmesan cheese
- salt and pepper
Step 1: Preheat an 8-inch pot with a tight-fitting lid over medium heat. Add the olive oil, garlic, and onion and saute for 2 to 3 minutes.
Step 2: Slowly add the broth or stock to the onion and garlic mixture. Stir and bring the mixture to a boil.
Step 3: Add in the orzo and stir well. Reduce the heat to a simmer and cover the pot.
Step 4: Stir occasionally and allow the orzo to cook for 15 minutes or until the pasta is tender and all the liquid has been absorbed.
Step 5: Add cheese, salt and pepper to taste. Stir and serve.
