The orange cake recipe from the Food Network is easy to make and calls for simple ingredients. Orange zest in the batter adds a pleasant tartness that is complemented by a sweet citrus glaze.
To make orange cake, beat together 3 large eggs and 1 1/4 cup of sugar until it begins to form ribbons. Beat in 1 cup of milk, 1/2 cup of olive oil and the minced zest from 1 orange. In a small bowl, sift together 1 3/4 cups of flour, 1/2 teaspoon of baking powder, 1/2 teaspoon of baking soda and 1/2 teaspoon of salt. Add the dry ingredients to the wet ingredients 1 tablespoon at a time, mixing after each addition. Pour the batter into a buttered, sugared and floured 8-inch baking pan. Bake at 400 degrees Fahrenheit for 45 to 55 minutes.
Meanwhile, combine 1/12 cups of orange juice and 1 1/2 cups of sugar in a large saucepan. Cut the skin from the orange used for zest, and slice the skin into thin strips. Add the strips to the saucepan, bring to a simmer and cook for 30 minutes, or until a thick syrup has formed. Strain the syrup, setting aside 1/2 cup of it along with the orange strips. When the cake is done and cooled, use a tooth pick to poke holes in the top of it. Pour the syrup over the top of the cake. Simmer the remaining syrup to reduce it to a glaze, then spread it over the cake.
