To prepare monkfish with spicy garlic vinaigrette, cut 1 1/2 pounds of monkfish fillets into 1-inch medallions. Whisk 2 tablespoons of olive oil with 2 tablespoons of lemon juice and 1 teaspoon of kosher salt to make a marinade. Coat the fish with the marinade and fry the medallions in a hot skillet for approximately two minutes on each side. Clean the skillet and reduce the heat to a medium setting. Cook 2 thinly sliced cloves of garlic in 6 tablespoons of olive oil. When the garlic is soft and golden, add 1 tablespoon of crushed red pepper and 1 tablespoon of sherry vinegar. Top the fish with the vinaigrette along with 1 tablespoon of chopped parsley.
To make braised monkfish with bacon and tomatoes, chop 6 bacon slices and separate and peel the cloves of 1 head of garlic. Cook the bacon and garlic with 2 tablespoons of olive oil in a large pot for approximately five minutes before nudging them to the side of the pot. Brown 3 to 4 pounds of monkfish on both sides. Add salt and pepper to taste and incorporate 4 chopped tomatoes. Sprinkle in 1 tablespoon of chopped basil and deglaze the pot with 1 cup of white wine. Cover the pot and allow the mixture to gently simmer for approximately 20 minutes.
