To prepare mahi mahi according to the Food Network recipe, start by making basil butter. Gently cook and stir 3 tablespoons butter, 1 1/2 tablespoons chopped fresh basil leaves, 1 1/2 teaspoons lemon juice and 1 finely chopped garlic clove in a saucepan and then add salt and pepper to taste. Season 4 mahi mahi fillets with salt and pepper. Cook the fish for approximately three minutes on each side with 3 tablespoons of olive oil in a skillet until the flesh turns opaque. Serve the fillets on individual plates with warm basil butter on top.
Follow the Epicurious recipe by lining a pan with greased foil or parchment paper. Place 4 mahi mahi fillets skin side down on the pan. Season the fish with 1/4 teaspoon of salt and 1/4 teaspoon of pepper.
