For simple leek soup, sauté 5 leeks in 3 tablespoons of butter. Stir in 2 32-ounce boxes of vegetable broth. Add 1 24-ounce container of Simply Potatoes Traditional Mashed Potatoes, and heat on medium until the potatoes soften. Add 1/4 cup heavy cream, and blend. Garnish with chopped chives.
