In a medium bowl, combine 1 1/2 pound of ground lamb, 2 cloves of finely minced garlic, 1/2 pound of crumbled feta cheese, 1/2 teaspoon allspice and 1/3 cup fresh, coarsely chopped parsley. Add salt and ground black pepper to taste. You can also add chopped, fresh mint into the burger mix. Form the mixture into four to six burger patties before cooking..
Heat a pan over medium-high heat, and cook the patties for about four minutes on each side, or until a crust begins to form. Allow the burgers to rest for about 10 minutes before serving on a bun or roll. Top with tzatziki sauce
To make the tzatziki sauce, gather a cup of whole milk Greek yogurt, two cloves of garlic, a teaspoon of lemon zest, a tablespoon of lemon juice and 2 tablespoons of chopped, fresh dill. Also have salt, cracked black pepper and a seeded, grated and drained English cucumber. Whisk all of the ingredients together, season with the salt and pepper to taste, and use it to top the lamb burger.
